My mum was having a diner party last weekend and I knew what was coming, cupcakes, meringue, and mums traditional triple chocolate brownie, how could I resist? Having the will power to resist sugary treats has always been my problem as like many who stop after a couple of mouthfuls I am not satisfied until I devour the whole thing!
However, I came up with a tactful plan to resolve this issue which would leave me feeling guilt free and satisfied…behold the banana and pecan brownie!
- 14 dates (unstoned)
- 1/2 cup of ground almonds
- 14 pecan nuts
- 1 banana
- 4 tbls algave syrup
Put the dates, pecan nuts and banana into the blender. It may get quite thick so I added a splash of unsweetened almond milk. Make sure you blend until the mixture goes smooth.
In a separate bowl mix the ground almonds and algave syrup together then add into the blender along with the other mixture.
Mix in the blender for about 2 minutes then take the mixture out of the blender and pour into a baking tray. Bake for 20 minutes, then let it cool off and decorate. I decorated mine with pecan nuts, strawberries and blueberries.
